Maintaining Food Safety
For food processors, maintaining food safety is critical for operations. Foodborne illness from contaminated food products is a leading concern. While food processors have developed protocols to minimize contamination by foodborne pathogens (i.e., listeria, salmonella), contamination is still possible.
One significant factor enabling foodborne illness is the presence of biofilms on surfaces. Biofilms are difficult to remove and can be resistant to disinfectants. This resistance reduces the effectiveness of cleaning and sanitation protocols, which can allow pathogens to remain on the surface of equipment and throughout manufacturing facilities. The challenge for food processors is that there are few effective, commercial solutions for biofilm removal, meaning contamination and foodborne illness remains a risk.
